%3C/p%3E%3Cp%3EMonths%20ago,%20I%20planned%20a%20special%20post%20in%20honor%20of%20my%20Dad%20for%20Father%E2%80%99s%20Day.%20It%20involved%20a%20little%20retrospective%20about%20my%20dad%20when%20he%20was%20younger,%20and%20some%20special%20sandwiches%20he%20used%20to%20eat.%20But%20that%20post%20ended%20up%20being%20a%20horrifying%20culinary%20experience%20that%20I%20simply%20could%20not%20associate%20with%20the%20wonderful%20part%20of%20my%20life%20that%20is%20my%20Dad.%3C/p%3E%3Cp%3EAnd%20so,%20when%20I%20saw%20that%20this%20week%E2%80%99s%20theme%20for%20I%20Heart%20Cooking%20Clubs,%20very%20appropriately,%20was%20Dining%20with%20Dad,%20it%20really%20struck%20a%20chord.%20My%20first%20instinct%20was,%20%E2%80%9Cwhat%20would%20I%20cook%20for%20my%20Dad?%E2%80%9D%20but%20that%20thought%20was%20quickly%20eradicated%20by%20another.%3C/p%3E%3Cp%3EOne%20of%20my%20fondest%20memories%20of%20my%20Dad%20involves%20breakfast.%20Over%20countless%20weekends%20when%20my%20sister%20and%20I%20were%20growing%20up,%20Dad%20would%20make%20breakfast.%20Almost%20always%20pancakes%20or%20waffles,%20but%20sometimes%20a%20fried%20egg%20sandwich.%20To%20this%20day,%20I%20don%E2%80%99t%20know%20if%20he%20and%20Mom%20had%20some%20kind%20of%20agreement%20that%20since%20she%20cooked%20throughout%20the%20week,%20that%20was%20his%20turn%20to%20cook;%20whether%20he%20looked%20forward%20to%20spending%20this%20time%20with%20his%20family,%20or%20if%20my%20sister%20and%20I%20just%20drove%20him%20to%20distraction%20by%20whining%20for%20pancakes%20until%20we%20got%20our%20way.%3C/p%3E%3Cp%3EI%20can%20still%20picture%20those%20mornings%20very%20clearly.%20Dad%20in%20his%20robe%20and%20us%20in%20our%20nightgowns.%20The%20same%20skillet%20and%20spatula,%20and%20the%20same%20plastic%20batter%20bowl%20and%20whisk.%20I%20can%20close%20my%20eyes%20and%20see%20him%20whisking%20up%20the%20batter,%20holding%20the%20bowl%20at%20an%20angle.%20Then%20using%20a%20butter%20knife%20to%20drop%20a%20little%20bit%20of%20oleo%20in%20the%20pan,%20spreading%20it%20across%20the%20whole%20surface%20with%20the%20spatula.%20And%20he%20only%20buttered%20the%20pan%20between%20every%20other%20batch%20of%20pancakes.%20Dad%20had%20pancakes%20down%20to%20a%20science.%20Knew%20exactly%20how%20much%20batter%20to%20pour%20into%20the%20pan%20and%20how%20long%20to%20let%20them%20cook%20before%20flipping%20them.%3C/p%3E%3Cp%3EI%20have%20a%20lot%20of%20great%20memories%20of%20my%20Dad,%20but%20when%20I%20think%20of%20food%20and%20my%20Dad%20at%20the%20same%20time,%20this%20is%20what%20I%20remember.%3C/p%3E%3Cp%3EIn%20any%20case,%20this%20tradition%20stuck%20with%20me%20my%20whole%20life,%20though%20college%20and%20beyond,%20to%20the%20point%20that%20when%20I%20came%20home%20for%20a%20visit,%20I%20would%20request%20waffles.%20(Dad%E2%80%99s%20waffles%20were%20always%20my%20favorite)%20Then,%20when%20I%20had%20my%20son,%20and%20he%20finally%20reached%20the%20age%20where%20we%20could%20sit%20down%20and%20have%20a%20hot%20breakfast%20together,%20waffles%20were%20the%20first%20thing%20I%20made%20for%20him.%3C/p%3E%3Cp%3EOn%20that%20note%20(that%20of%20becoming%20a%20parent%20in%20my%20own%20right)%20even%20though%20my%20preference%20would%20be%20to%20have%20waffles%20(love%20those%20little%20crevices%20filled%20with%20butter%20and%20syrup),%20I%20can%E2%80%99t%20help%20but%20think%20of%20my%20Little%20Man.%20He%20does%20love%20patty-cakes%20(that%E2%80%99s%20%E2%80%98pancakes%E2%80%99%20to%20those%20of%20you%20who%20can%E2%80%99t%20translate%20my%205%20year-old%E2%80%99s%20vocabulary),%20and%20even%20more%20so%20if%20there%20are%20chocolate%20chips%20on%20them.%3C/p%3E%3Cp%3ESo,%20making%20this%20a%20three-generation%20breakfast,%20we%20are%20dining%20with%20Dad,%20and%20Grandpa,%20depending%20on%20which%20one%20of%20us%20you%20ask.%20If%20it%20were%20my%20Dad%20cooking,%20it%20would%20be%20a%20strict%20Bisquick%20mix,%20but%20since%20we%20are%20having%20breakfast%20a%20la%20Mark%20Bittman,%20I%20have%20used%20a%20recipe%20from%20his%20How%20To%20Cook%20Everything%20that%20was%20a%20real%20winner%20for%20me%20and%20my%20Little%20Man.%20Not%20to%20mention%20that%20he%20was%20very%20excited%20to%20be%20getting%20chocolate%20chip%20pattycakes%20for%20supper!%20I%20wasn't%20complaining,%20either.%20Sometimes%20its%20fun%20to%20have%20breakfast%20for%20supper.%20(Do%20you%20think%20its%20okay%20to%20have%20red%20wine%20with%20pancakes?%20Yeah,%20so%20do%20I...)%3C/p%3E%3Cp%3EHere%E2%80%99s%20to%20you,%20Dad.%20Wish%20we%20could%20have%20had%20you%20here%20to%20enjoy%20them%20with%20us.%20I%20only%20hope%20Ty%20will%20have%20as%20many%20great%20memories%20of%20me%20as%20I%20will%20always%20have%20of%20you.%20We%20love%20you%20so%20much%20and%20we%20can't%20wait%20to%20see%20you%20in%20JulyChocolate%20Chip%20Pancakes%3C/p%3E%3Cp%3EWarm%20butter%20in%20a%20skillet%20over%20medium%20heat.%20Mix%20all%20ingredients%20together%20(can%20still%20be%20a%20little%20lumpy)%20and%20pour%20batter%20into%20the%20pan.Sprinkle%20chocolate%20chips%20over%20each%20pancake.When%20the%20edges%20of%20the%20pancakes%20begin%20to%20bubble,%20flip%20them%20over.%20Cook%20until%20done%20and%20serve%20to%20one%20very%20happy%20little%20boy.%20(Okay,%20so%20I%20added%20that%20part%20on%20my%20own.)Here's%20to%20you,%20Dad.%3C/p%3E){kind=link}
