Ingredientes

  • 1/2 lb Chicken gizzards, or possibly a combination of hearts and gizzards
  • 2 Tbsp. Vegetable oil
  • 1 x Onion, minced
  • 1 x Rib celery, minced
  • 1/2 c. Minced green pepper
  • 3 x Cloves garlic, chopped
  • 2 ounce Chicken livers, trimmed and minced
  • 1/4 lb Grnd pork (not sausage)
  • 1 c. Chicken stock or possibly canned broth
  • 1/4 tsp Black pepper
  • 1/4 tsp Salt
  • 1/4 tsp Cayenne
  • 1/2 tsp Dry mustard
  • 1/2 tsp Grnd cumin
  • 2 c. Cooked white rice
  • 2 x Green onions, minced
  • 2 Tbsp. Minced fresh parsley

  3. Put the gizzards in a small saucepan, cover with water, and bring to a boil. Reduce the heat and simmer, uncovered, for 1 hour, adding extra water if necessary. Drain the gizzards and set aside till cold sufficient to chop.
  4. In a large saucepan over medium heat, heat the oil. Saute/fry the onions, celery, green pepper and garlic till the vegetables are limp, about 5 min. Add in the livers and pork and cook, stirring, till meat is browned. Add in the minced gizzards, along with chicken stock and spices and continue cooking till the liquids are slightly reduced. Taste and adjust seasonings.
  5. If the rice was not cooked with salt, you will need to add in more salt here.
  6. Add in the rice, green onions and parsley, and cook just till heated through, about 2 min. Bon appetit!
