My little guy Carson loves Pop-Tarts. Frosted or not they're his favorite snack or quick on the go breakfast. I told him I was trying my hand at making a DIY version and all he said was good luck, little stinker.
I will be the first to admit that I've never made my own Toaster Tarts, but I was willing to give it a try. I headed to Walmart to get everything I needed. I chose to use my favorite Jiffy Pie Crust to make the pastry.
If you want you can use your own favorite pie crust recipe, but this particular time I wanted a quick and easy version. I can always depend on Jiffy's Pie Crust to turns out every time. I made Brown Sugar & Cinnamon Toaster Tarts, because that's my sons favorite and I wanted to surprise him.
If you prefer a fruit filled toaster tart I highly recommend Bonne Maman Strawberry Fruit Preserves. It's the perfect consistency for toaster tarts and has the least amount of additives. I would of used my homemade jam, but I'm in desperate need of making a new batch.
For my first time at making DIY Toaster tarts, they turned out awesome! To seal the deal I had to get my sons approval. He was surprised at how much they looked like the real thing. He took a bite and said "mom you did good".
DIY Brown Sugar & Cinnamon Toaster Tarts
Pastry:
2 - boxes Jiffy Brand Pie Crust
- 8 - 10 tablespoons cold water
- 1 - egg beaten (to seal edges of dough)
- Brown Sugar - Cinnamon Filling:
- 8 - tablespoons brown sugar
- 8 - teaspoons granulated sugar
- 1 - tablespoon all purpose flour
- 2 - teaspoons ground cinnamon
- Glaze:
- 1 - cup powdered sugar
- 2 - tablespoons milk
- 1/2 - teaspoon ground cinnamon
- 1/4 - teaspoon vanilla extract
Pre-heat the oven to 350 degrees. Prepare pasty according to package directions adding cold water. Cut dough in half and roll pasty out on a floured surface to about about 1/8" thick, large enough that you can trim it to an even 9" x 12". Trim off the edges;
Cut rectangle into 6 even squares. Use a pizza cutter to cut the dough into the desired size that you would like. Mix the filling ingredients and set aside. Beat the egg, and brush it over the outer edges of each dough square (this will act as a glue). Place a heaping tablespoon of brown sugar filling into the center of each marked rectangle.
Place the second sheet of dough atop the first, using your fingertips to press firmly around the edge sealing the sides. Using a fork press it around the whole edge of the rectangle to seal the edges. Place the tarts on a lightly greased or parchment-lined baking sheet.
Prick the top of each tart multiple times with a fork; so the steam can escape, or the tarts will look like a pillow rather than flat. Place in the oven and bake for about 20 minutes or until lightly golden brown.
Remove from oven and allow to cool on pan for about 5 minutes. Remove to a cooling rack to cool completely. When completely cool mix the glaze ingredients together and frost brush on each toaster tart. I brushed on two coatings. Let dry until glaze hardens.
Recipe yields: 8-10 Toaster Tarts (Depending on the size)
If you're looking for a healthier pie crust, I used the recipe below to make a batch of Mini Strawberry Toaster Bites. I cut the pie crust into mini squares and filled each one with about 1/2 teaspoon of jam.
Healthier Pastry Crust
1 1/4 - cups white whole wheat flour
2 - teaspoons sugar
1/4 - teaspoon salt
1 - stick (1/2 cup) cold butter, cut into pieces
1/4 - cup ice water, more if needed
In a large bowl, mix flour, sugar and salt together well. Using a pastry cutter, cut the butter into the flour until the pieces resemble coarse crumbs.
Add the 1/4 cup of water, and with your hands, bring the flour and butter mixture together until it forms a dough. Or use the paddle attachment of your kitchen aid.
If you need more water, sprinkle more over the dough a tablespoon at a time. Handle the dough as little as possible, gathering it together and patting it into a ball.
