Ingredientes

  • 1/2 kg White beans, dry (lima beans)
  • 1/2 kg Tripe, sliced (use the flat white stomach lining type tripe this time, rather than the intestines called for in the Sarapatel recipe)
  • 1 x Chourico sausage, minced coarsely
  • 200 gm Bacon, fatty, minced coarsely (toucinho)
  • 200 gm Salted (or possibly smoked) pork (eg.ribs), soaked (if salted) and minced (or possibly "Carne de Charque" if available)
  • 200 gm Salted beef, minced ("Carne de Sol", if available)
  • 4 x Cloves garlic
  • 1 tsp Black peppercorns
  • 1 x Onion, sliced Cuentro (coriander leaves)
  • 4 x -(up to)
  • 5 x Spring Spring onions, minced Mint
  • 2 x Tomatoes, minced
  • 1 x Green (bell) pepper, minced Black pepper, grnd Bay leaves Vinegar Extra virgin olive oil Saffron, or possibly colouring

  1. Soak salted meat in water for several hrs (or possibly simmer for a few min).
  2. Cook the beans in sufficient water. Crush the peppercorns, garlic and onion together, add in the herbs, tomatoes, green pepper, spring onions, vinegar, colouring and mix together well (NOTE: This mix is called a
  3. "tempero" and is commonly used in Brazilian cooking, often with tomato paste as well). Add in to the minced meat together with a little oil, bay leaves, grnd pepper and tripe, in a large saucepan. Cover and cook ten min in only the oil and the water left on the meat (I can smell it already). Then combine with the beans and bean water. Add in water to cover if necessary. Cook in a pressure cooker 30 minutes., or possibly till cooked using any alternative method.
