%20swaggering%20dangerously%20down%20the%20black%20iced%20roads;%20frustrated%20cars%20crawling%20at%20a%20snail's%20pace%20as%20gritters%20decide%20to%20come%20out%20at%20peak%20times%20of%20travel;%20and%20then%20there%20was%20me,%20shuffling%20through%20the%20snow,%20tripping%20up%20every%20now%20and%20again%20when%20kicking%20a%20kerb%20instead%20of%20what%20I%20thought%20was%20a%20pile%20of%20snow.%3C/p%3E%3Cp%3EIt's%20probably%20safe%20to%20say%20that%20winter%20has%20arrived,%20and%20if%20you%20can't%20prepare%20for%20the%20snow%20like%20the%20travel%20networks%20here,%20there's%20only%20one%20thing%20left%20you%20can%20do%20to%20prepare%20for%20the%20cold.%3C/p%3E%3Cp%3EDoing%20the%20Congee%20Dance!%3C/p%3E%3Cp%3EThe%20Congee%20-%20heartwarming%20rice%20porridge%20('jook')%20with%20Asian%20flavourings.%3C/p%3E%3Cp%3EThe%20Dance%20-%20well,%20this%20bit%20is%20optional%20really,%20as%20you%20may%20not%20be%20so%20inclined%20to%20dance%20around%20the%20kitchen%20whilst%20you%20wait%20for%20this%20to%20cook.%3C/p%3E%3Cp%3EYes,%20congee%20takes%20a%20while%20to%20make%20-%20as%20you%20basically%20need%20to%20boil%20the%20rice%20in%20loads%20of%20water%20for%20hours!%20It's%20really%20worth%20the%20wait%20though,%20as%20it's%20quite%20simply%20the%20Mother%20of%20All%20Comfort%20Foods.%20Comforting%20when%20you're%20cold,%20sick,%3C/p%3E%3Cp%3EIf%20you%20can,%20you%20should%20leave%20the%20rice%20to%20soak%20in%20the%20water%20overnight.%20This%20will%20save%20you%20some%20boiling%20time%20(and%20also%20some%20electric/gas%20too!)%20and%20it%20will%20also%20help%20you%20get%20that%20soft%20consistency.%3C/p%3E%3Cp%3ENow,%20the%20water%20to%20rice%20ratio%20for%20congee%20depends%20on%20your%20own%20personal%20taste%20(and%20the%20size%20of%20your%20pan).%20I%20like%20my%20congee%20quite%20thick%20so%20the%20ratio%20of%20water%20to%20rice%20for%20me%20is%20only%20(!)%208:1,%20so%20about%202%20litres%20of%20water%20for%20200g%20rice.%20This%20makes%20about%204%20bowls%20(though%20I%20ate%20this%20myself%20in%20the%20space%20of%20two%20days!)%3C/p%3E%3Cp%3EIf%20you%20want%20it%20to%20be%20a%20bit%20thinner,%20just%20add%20an%20extra%20500ml%20and%20see%20how%20you%20get%20on.%3C/p%3E%3Cp%3EThe%20version%20I%20have%20done%20here%20is%20quite%20a%20basic%20congee%20-%20just%20white%20fish,%20a%20bit%20of%20ginger,%20soy%20sauce,%20sesame%20oil%20and%20fresh%20coriander.%20Pork%20ribs%20in%20congee%20is%20also%20a%20favourite%20of%20mine,%20the%20meat%20just%20slides%20off%20the%20bone,%20mm!%3C/p%3E%3Cp%3E1)%20Gently%20bring%20the%20rice%20to%20the%20boil%20(using%20the%20same%20water%20that%20you've%20soaked%20it%20in).%3C/p%3E%3Cp%3E2)%20Turn%20down%20the%20rice,%20mix%20in%20the%20soy%20sauce,%20sesame%20oil%20and%20ginger,%20and%20leave%20to%20simmer%20for%201-1.5%20hours%20until%20it%20thickens,%20strring%20occasionally.%20Season%20to%20taste.%3C/p%3E%3Cp%3E3)%20Meanwhile%20poach%20the%20fish%20in%20slightly%20salted%20water.%3C/p%3E%3Cp%3E4)%20In%20the%20last%2010%20minutes,%20mix%20in%20the%20fish%20and%20spring%20onion%20into%20the%20rice.%3C/p%3E%3Cp%3E5)%20Stir%20in%20some%20fresh%20coriander%20to%20serve.%3C/p%3E){kind=link}
