Double Baked Stuffed Potato

Ingredientes

  • 12 med. baking potatoes
  • 1 1/2 c. lowfat sour cream
  • 1/2 c. butter
  • 1/4 c. lowfat milk
  • 1/3 c. minced chives
  • 2 teaspoon salt
  • Pepper to taste
  • Paprika

Direcciones

  1. Preheat oven to 400 degrees. Rub potatoes with oil. Bake 1 hour. Cold to handle. Cut about 1 inch off top of each potato carefully, leaving shells intact. Set aside.
  2. In bowl mash potatoes, lowfat sour cream, butter, lowfat milk, chives, salt and pepper. Spoon or possibly pipe into potato shells. Bake 15 min till warm. 12 servings.
