Ingredientes

  • 1 c. all-purpose flour
  • 1/2 c. unsweetened cocoa
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 c. butter or possibly margarine, softened
  • 1 c. granulated sugar
  • 2 lrg Large eggs
  • 2/3 c. lowfat milk
  • 1 tsp vanilla extract
  • 1/2 c. miniature chocolate chips
  • 1 pkt (3 ounce.) cream cheese
  • 1 Tbsp. butter or possibly margarine
  • 1 c. confectioners' sugar
  • 1/2 tsp vanilla extract
  • 1/2 c. shredded coconut, toasted, optional

Direcciones

  1. Heat oven to 350 degrees. Line eighteen 2 1/2-inch muffin c. with paper liners.
  2. Combine flour, cocoa, baking pwdr and baking soda in small bowl; set aside. Beat butter in mixer bowl till creamy. Beat in granulated sugar till light and fluffy. Beat in Large eggs one at a time. Combine lowfat milk and vanilla; add in to batter alternately with dry ingredients, beginning and ending with dry ingredients. Beat 1 minute at medium speed. Mix in chocolate chips.
  3. Spoon proportionately into prepared pans. Bake 18 to 20 min till toothpick inserted in center comes out clean. Cold on wire rack 5 min. Remove from pans and cold completely.
  4. Make Cream Cheese Frosting: Beat cream cheese and butter in bowl till creamy. Beat in confectioners' sugar and vanilla till smooth. Frost tops of cupcakes. Garnish with coconut, if you like.
  5. Makes 18 cupcakes.
  6. Cocoa pwdr and miniature chocolate chips give these cupcakes a double chocolate whammy. Mini chips are preferable for this recipe because their tiny size and weight make for more even distribution in the batter.
