Double Chocolate Vodka Strawberry Shortcake
- FOR THE INFUSED STRAWBERRIES
- 1 sterilized quart jar
- about a pound strawberries, stems removed
- ¾ cup double chocolate vodka
- FOR THE SHORTCAKES
- 1¾ cup all-purpose flour
- 2½ Tablespoons granulated sugar
- 1 Tablespoon baking powder
- ½ teaspoon salt
- ⅔ cup 2% milk
- 2 Tablespoons double chocolate vodka
- ¼ cup grapeseed oil
- TO INFUSE THE STRAWBERRIES
- Poke hole into the strawberries to soak up the vodka
Add the berries to the jar.
Fill with the vodka.
Seal and refrigerate for 1 to 24 hours.
FOR THE SHORTCAKES
Preheat oven to 425°F.
Combine flour, granulated sugar, baking powder and salt in medium bowl.
In a separate bowl, add the milk then remove 2 Tablespoons of the milk.
Add the vodka and the oil. Add to the flour mixture.
Stir with fork until mixture forms dough.
Turn dough out onto floured work surface.
Shape into ½-inch-thick circle.
Cut 8 dough circles with floured 2-1/2-inch cookie cutter. Piece together dough scraps, as necessary, to complete circles.
Place biscuits on ungreased baking sheet.
Bake 10 to 12 minutes or until golden brown. Remove pan from oven; cool completely on wire rack.

Yes. This is the recipe I was going to enter into the Spiked recipe challenge.
But hey, they were delicious and I had to share it with all of you. I mean, it didn’t bother me in the least that after creating this recipe I had to made something else. After all, I had left over spiked strawberries so why not.
It also helped that I had been home alone all week. The hubby was out on a business trip. I felt like I had extra time on my hands. I was restless. I often find cooking or baking to be very therapeutic. And then you get to enjoy the tastes of your labor of love in the kitchen.
The shortcakes were so moist and delicious. The spiked strawberries became the icing on the cake, so to speak.
