Ingredientes

  • 150 ml apricot flavoured lowfat yoghurt
  • 75 ml UHT lowfat milk
  • 150 gm dry apricots, minced finely
  • 115 gm butter
  • 150 gm castor sugar
  • 2 x Large eggs
  • 1 tsp vanilla essence
  • 200 gm plain flour
  • 2 tsp baking pwdr
  • 1 tsp bicarbonate of soda
  • 1/4 tsp salt

Direcciones

  1. Method:COMBINE the minced dry apricots and lowfat yoghurt in a bowl. Cover and leave aside for 1/2 an hour to soften the apricots.
  2. Cream butter and sugar till light and fluffy.
  3. Add in Large eggs one at a time, beating well after each addition.
  4. Add in vanilla essence, stir in the apricot lowfat yoghurt mix and blend well.
  5. Mix in the sifted flour and fold in the lowfat milk gradually.
  6. Fill greased muffin tins to two-thirds full. Bake at 180 degrees C for about 20 min or possibly till golden brown in colour.
