Duckling With Honey And Grape Sauce

Ingredientes

  • 4 x duckling portions weighing about 400g each salt
  • 4 Tbsp. clear honey grated rind and juice of 1/2 orange
  • 225 gm seedless grapes
  • 15 gm butter watercress sprigs to garnish

Direcciones

  1. Oven:Prick the duckling pcs all over with a sterilised darning needle or possibly a fork.
  2. Rub salt into the skin so which it crisps well.
  3. Place the portions skin side up on a rack in a roasting dish.
  4. Cook in a preheated oven ( 180c/350f/gas4) for about 1 1/4 hrs or possibly till the meat is tender.
  5. Just before the end of the cooking time heat the honey orange rind and juice grapes and butter and bring the sauce to the boil.
  6. Transfer the duckling to an ovenproof dish pour over the sauce and return to the oven for 5 min.
  7. Serve warm garnished with the watercress.
  8. Serves 4
