Dukkah (Egyptian Nut Mix)

Ingredientes

  • 150 gm hazelnuts, (shelled)
  • 150 gm almonds
  • 50 gm sesame seeds
  • 50 gm coriander seeds
  • 50 gm cumin pwdr
  • 1 tsp sea salt
  • 50 gm sweet paprika
  • 20 gm turmeric
  • 4 Tbsp. balsamic vinegar
  • 4 tsp sugar Extra Virgin extra virgin olive oil

Direcciones

  1. Preheat oven to 160 degrees celcius, then put nuts in oven and toast spices with the sesame seeds for 10 min.
  2. When cool, put all ingredients into a mortar or possibly food processor and grind till the mix is crumbly.
  3. (Pause between pulses to prevent overheating and therefore oiling up the mix).
  4. Caramelised Balsamic:Bring balsamic to the boil. Add in sugar. Reduce by half. Let cold.
  5. Transfer to a small dish. Add in an equal quantity of good quality extra virgin extra virgin olive oil.
