Receta Dulce de Leche Krispy Treats and Mexican Coffee

Enchiladas Verdes~
- 2 tomatillos*
- 1/2 cup chopped onion
- 4 t chili powder
- 2 cloves garlic, minced
- 2 T oil
- 1-can cream of chicken soup
- 1/2 cup salsa verde
- 1-can (4 oz) chopped green chilies, drained
- 1 jar (4 oz) diced pimientos, drained
- 1/2 c sour cream
- 12-6-inch corn tortillas
- 3 cups cooked chicken, cubed
- 1 can salsa de chiles verdes (green enchilada sauce)
- 2 cups shredded Mexican-style cheese
- 2 sliced green onions, cilantro and/or toppings of your choice
- Remove and discard the thin, brown, papery husks from the tomatillos. Rinse tomatillos, finely chop. (should have a 1/2 cup.) For sauce, in a medium saucepan cook chopped tomatillos, onion, chili powder and garlic in hot oil over medium heat until vegetables are tender. Remove from heat and stir in soup, salsa, chopped green chilies, pimientos, and sour cream. Stir in cooked cubed chicken.
- Spread 1/2 can of enchilada sauce in the bottom of a 3-quart rectangle baking dish. Put a 1/4 cup or more of chicken mixture on one end of each corn tortilla, roll up. Lay filled corn tortillas, seam side down, on sauce. Continue with remaining chicken mixture and tortillas. Pour remaining enchilada sauce over filled tortillas. Sprinkle with cheese.
- Bake covered at 350 for 45 minutes, remove cover and cook another 15 minutes or until bubbly and cheese is melted. Let stand 5 minutes before serving. Garnish with green onions, cilantro and toppings of your choice
- Dulce de Leche Krispy Treats~
- 6 T butter
- 2-8 oz. packages vanilla and caramel marshmallows
- 1/3 cup Dulce de Leche (I used canned Nestle La Lechera)
- 1-16.5 oz box Cocoa Puffs or Cocoa Krispie Cereal
- 2-4 T dulce de leche for drizzle
- Melt the butter and marshmallows in a saucepan over low heat, stirring constantly until melted. Once marshmallows are melted, add the dulce de leche and stir until combined. Add cereal, remove from heat and stir until coated. Pour into a buttered 13 x 9 inch pan. Press into pan with buttered spatula. Cool. Drizzle with dulce de leche.
- Mexican Coffee~
- 3/4 cup ground dark roast coffee, (regular or decaffeinated)
- 2 t ground cinnamon
- 6 cups water
- 1 cup milk
- 1/3 cup chocolate syrup
- 2 T light brown sugar
- 1 t vanilla extract
- Whipped Topping, garnish
- Ground Cinnamon, garnish
Place coffee and cinnamon in basket of coffeemaker. Add water to coffeemaker; brew as directed. Simmer milk, chocolate syrup and sugar in a small saucepan on low heat until sugar dissolves. Stir milk mixture and vanilla into brewed coffee.
Pour into serving cups. Garnish with whipped cream and ground cinnamon, if desired.
* What is a tomatillo? The tomatillo is a plant of the nightshade family, related to the cape gooseberry, bearing small spherical green or green-purple fruit of the same name. Tomatillos originated in Mexico and are a staple of that country's cuisine. Tomatillo are generally eaten fried, boiled, steamed or made into sauces or salsas. Tomatillos are the key ingredient in fresh and cooked Mexican and Central-American green sauces. The fruit should be firm and bright green, to make fresh sauces. Tomatillos have a high pectin content. The purple and red varieties have a slight sweetness which makes them suitable for jams and preserves.
