Ingredientes

  • 2 c. Dungeness crab meat - (7 ounce)
  • 4 c. half-and-half
  • 1 x onion peeled, not minced
  • 2 Tbsp. butter
  • 2 Tbsp. flour Salt to taste Freshly-grnd white pepper to taste
  • 1 dsh nutmeg Sherry to taste

Direcciones

  1. Chop the crab meat very fine and simmer it in the half-and-half with the onion for 20 min.
  2. Heat the butter in a medium saucepan over low heat and add in the flour all at once, stirring till blended. Cook till the mix is just beginning to turn golden brown, about 5 min.
  3. Remove the onion from the half-and-half and add in the liquid to the butter and flour mix. Cook, stirring frequently, till the soup thickens, 3 min. Season with salt and a little white pepper. Just before serving, add in the nutmeg and a splash of Sherry to taste.
  4. This recipe yields 4 servings.
