Ingredientes

  • 1 sm. onion, thinly sliced
  • 2 tbsp. oil
  • 2 - 3 med. potatoes, sliced as for scalloped potatoes
  • 1 c. evaporated lowfat milk
  • 1/2 pound small curd cottage cheese
  • Minced parsley
  • Dash of garlic salt

Direcciones

  1. Saute/fry onion in oil in soup kettle. Add in potatoes and sufficient water to cover; simmer till tender. Add in evaporated lowfat milk, bring just to a boil, and gently stir in cottage cheese. Top with minced parsley to serve. Serves 4.
