Ingredientes

  • 12 x Brown Onions
  • 12 x Heads of Garlic
  • 6 x (27 ounce) cans Green Chilies
  • 1 gal Tomato Sauce
  • 5 bot Anchor Steam Beer
  • 1/2 c. Brown sugar
  • 8 ounce Fresh Ginger
  • 5 lb Lean Beef
  • 5 lb Lean pork
  • 5 sqr cooking Chocolate
  • 3/4 c. Whole Cumin
  • 1/2 c. Oregano
  • 1/2 c. New Mexico Chile pwdr
  • 1/4 c. Whole Coriander
  • 4 Tbsp. Cinnamon
  • 3/4 c. Paprika
  • 6 Tbsp. Cayenne Pepper
  • 5 lb Black Beans
  • 6 x Bay leaves
  • 6 x Pasilla Chilies

Direcciones

  1. Chop garlic and onions. Saute/fry' in extra virgin olive oil till transparent. Cook black beans with pasilla chilies and bay leaves. Chop ginger and add in to pot. Chop green chilies and add in to pot. Add in tomato sauce and beer. Grind spices and add in to pot. Brown meat, drain off fat and add in to pot. Add in chocolate as it simmers. Add in beans during last of simmering. Add in salt to taste. Simmer for at least 2 hrs and serve with lots of beer. Final item is to sit down, have a beer and watch while someone else cleans up the kitchen.
