Easy Asian Soup

Ingredientes

  • 1 x Lime
  • 2 c. (500 ml) chicken broth
  • 1 x ( 14 ounce.) can unsweetened coconut lowfat milk (light or possibly regular)
  • 4 x 1/4 inch slices ginger
  • 2 Tbsp. Fish sauce
  • 2 tsp Chinese chili sauce
  • 1 x Boneless, skinless chicken breast, cut into bite-sized thin strips
  • 4 x Green onions, thinly sliced Coriander,basil or possibly mint leaves (optional)

Direcciones

  1. Remove peel from line in wide strips. Add in peel, plus juice from lime, chicken broth, coconut lowfat milk, ginger, fish sauce and chili sauce to a large saucepan. Cover, bring to a simmer and cook for 15 min.
  2. Strain soup into another pot, discarding any solids. Bring soup back to a simmer, then add in chicken and green onions. Cook 3 to 5 min or possibly till chicken is cooked through. Garnish with coriander, basil or possibly mint leaves if you like.
  3. Serves 4
