Receta Easy Cabbage Salad with Yogurt Dressing, and more salads
I like to have salads on hand in the fridge in summer.
I don’t often remember to put them on the table for dinner, but we we tend to graze a bit more in the summer and they’re great to snack on during the day.
And I eat even more strangely than usual in the summer.
My typical lunch is yogurt, a couple of nectarines or peaches, either a big tomato, sliced or a handful of cherry tomatoes and a hard-boiled egg (a bit of protein). A small dish of some sort of salad rounds it out nicely.
Mon mari eats anything and everything he can find in the fridge. (No, I do not, have never and never will make him lunch…. or breakfast. He’s an adult, he can handle it.)
I do like to keep my salads on the healthy side, however…. Even when I’m craving a heavy mayo dressing.
Using part plain or Greek yogurt lightens it while keeping the mayo flavor.
Easy Cabbage Salad with Yogurt Dressing
Total time: 15 minutes
Ingredients:
- 2 cups shredded cabbage
- 1/2 orange bell pepper, chopped
- 2 tbs fresh, snipped chives
- Yogurt Dressing:
- 4 tbs Greek yogurt
- 3 tbs mayonnaise
- 2 tbs white Balsamic Vinegar
1 tbs Dijon-style mustard
Instructions:
Put cabbage, chives and pepper into a large bowl.
Add half of the dressing and toss well to combine.
Add more dressing according to taste and the amount of cabbage.
Yogurt Dressing:
In small bowl whisk yogurt, mayonnaise, mustard and vinegar.
