,%201%20bag%20of%20cooked%20rice%20(%20I%20froze%20extra%20rice%20from%20a%20recipe%20that%20I%20made%20a%20month%20or%20so%20ago)%20and%20one%20bag%20of%20stir%20fry%20vegetables.%20I%20let%20them%20thaw%20on%20the%20countertop%20and%20headed%20outside%20for%20some%20yard%20work.%3C/p%3E%3Cp%3EAt%205:45%20I%20heated%20some%20oil%20in%20my%20skillet%20over%20high%20heat,%20then%20dumped%20the%20chicken%20out%20of%20the%20bag%20to%20cook%20in%20the%20hot%20oil.%20I%20stir%20fried%20it%20for%203-5%20minutes%20until%20it%20was%20just%20cooked.%3C/p%3E%3Cp%3EThen%20I%20dumped%20in%20that%20bag%20of%20veggies%20and%20cooked%20them%20covered%20for%20a%20bit%20until%20things%20really%20heated%20up%20and%20then%20uncovered%20them%20so%20some%20of%20the%20liquid%20could%20cook%20off%20(the%20veggies%20were%20a%20bit%20icy).%20I%20tasted%20the%20sauce%20from%20the%20skillet%20and%20decided%20to%20add%20a%20little%20Hoisin%20sauce,%20some%20soy%20sauce,%20and%20some%20mashed%20ginger.%20You%20can%20season%20it%20however%20you%20like.%20It%20would've%20been%20fine%20with%20just%20the%20marinade%20as%20sauce,%20but%20I%20wanted%20to%20play%20with%20it%20a%20bit.%20Red%20pepper%20flakes%20would%20have%20been%20good%20here%20too!%3C/p%3E%3Cp%3EOnce%20the%20veggies%20were%20cooked%20to%20the%20desired%20consistency,%20I%20dumped%20in%20the%20bag%20of%20cooked%20rice%20and%20stirred%20it%20all%20around%20until%20it%20was%20heated%20through.%3C/p%3E%3Cp%3EAnd%20that's%20it!%20Dinner!%20This%20was%20pretty%20tasty%20for%20what%20it%20was.%20Everyone%20ate%20it.%20The%20only%20change%20that%20I%20would%20make%20is%20to%20use%20fresh%20veggies%20next%20time.%20I%20think%20that%20these%20were%20a%20tad%20freezer%20burned.%3C/p%3E%3Cp%3EEasy%20Chicken%20Stir%20Fry%3C/p%3E%3Cp%3EMarinate%20the%20chicken%20for%204%20or%20more%20hours.%20Heat%20about%202%20tablespoons%20of%20oil%20in%20a%20skillet%20or%20wok%20over%20medium%20high%20to%20high%20heat.%20Add%20the%20chicken%20and%20stir%20fry%20until%20just%20done.%20Add%20the%20veggies%20and%20stir%20fry%20until%20tender%20crisp.%20Stir%20in%20the%20cooked%20rice%20and%20heat%20through.%20Serve.%3C/p%3E%3Cp%3EWhat's%20your%20favorite%20quickie%20dinner?%3C/p%3E){kind=link}
