%3C/p%3E%3Cp%3EI%20made%20eggplant%20parm%20a%20few%20other%20times%20and%20only%20in%20the%20past%20year%20or%20so,%20if%20memory%20serves.%20%20Which,%20of%20course,%20it%20may%20not.%20%20But%20I%20do!%20%20%E2%80%A6..%20%20I%20think%20I%20%20had%20always%20come%20across%20fussy%20looking%20recipes%20for%20any%20kind%20of%20parmesan.%20%20Also,%20I%20was%20biased%20against%20frying%20because%20of%20added%20fat.%3C/p%3E%3Cp%3EI%20have%20used%20a%20Rachel%20Ray%20recipe%20that%20calls%20for%20coating%20and%20then%20baking%20the%20eggplant%20rounds.%20%20It%20is%20tasty,%20but%20nothing%20to%20write%20home%20about.%20%20My%20theory?%20%20It%20just%20ain%E2%80%99t%20parmesan%20if%20you%20don%E2%80%99t%20fry%20whatever%20it%20is%20you%20are%20parming!%20%20I%E2%80%99ll%20add%20that%20I%20think%20there%20needs%20to%20be%20some%20kind%20coating%20on%20the%20eggplant%20before%20frying%20and%20my%20current%20preference%20is%20%20a%20dip%20in%20milk%20and%20then%20flour%20so%20the%20taste%20and%20texture%20of%20the%20eggplant%20does%20not%20get%20masked.%20%20But,%20I%20will%20try%20it%20with%20breadcrumbs%20sometime,%20too.%20%20Hard%20to%20not%20like%20anything%20with%20breadcrumbs.%3C/p%3E%3Cp%3EANYWAY%20%E2%80%93%20here%20is%20the%20recipe%20I%20started%20with,%20from%20Allrecipes.com:%3C/p%3E%3Cp%3ESprinkle%20both%20sides%20of%20the%20eggplant%20slices%20with%20salt.%20Place%20slices%20in%20a%20colander,%20and%20place%20a%20dish%20underneath%20the%20colander%20to%20capture%20liquid%20that%20will%20sweat%20out%20of%20the%20eggplant.%20Allow%20to%20sit%20for%2030%20minutes.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F%20(175%20degrees%20C).%20In%20a%20medium%20bowl,%20mix%20the%20ricotta,%20mozzarella%20cheese%20and%201/4%20cup%20Parmesan%20cheese.%20Mix%20in%20egg%20and%20basil.%3C/p%3E%3Cp%3ERinse%20the%20eggplant%20in%20cold%20water%20until%20all%20salt%20is%20removed.%20In%20a%20large%20skillet,%20heat%204%20tablespoons%20olive%20oil%20over%20medium%20heat.%20Place%20one%20layer%20of%20eggplant%20in%20the%20pan,%20brown%20each%20side.%20Repeat%20with%20remaining%20eggplant%20slices,%20using%20additional%20oil%20if%20necessary.%3C/p%3E%3Cp%3EIn%20a%209%C3%9713%20inch%20baking%20dish,%20evenly%20spread%201%201/2%20cups%20of%20spaghetti%20sauce.%20Arrange%20a%20single%20layer%20of%20eggplant%20slices%20on%20top%20of%20the%20sauce.%20Top%20the%20eggplant%20with%201/2%20of%20the%20cheese%20mixture.%20Repeat%20layering%20process%20until%20all%20the%20eggplant%20and%20cheese%20mixture%20is%20used.%20Pour%20remaining%20sauce%20on%20top%20of%20layers,%20and%20sprinkle%20with%20remaining%20Parmesan%20cheese.%3C/p%3E%3Cp%3EBake%2030%20to%2045%20minutes%20in%20the%20preheated%20oven,%20until%20sauce%20is%20bubbly.%3C/p%3E%3Cp%3E_______________________________________________________________________%3C/p%3E%3Cp%3EThe%20only%20things%20I%20did%20differently%20was%20to%20slice%20the%20eggplant%20about%201/3%20an%20inch%20thick%20and%20dip%20the%20slices%20in%20milk%20and%20then%20flour%20before%20frying.%20%20Oh,%20I%20tried%20the%20%E2%80%9Csalting%20and%20sweating%E2%80%9D%20thing%20but%20no%20liquid%20came%20out.%20%20My%20eggplant%20came%20from%20%20Farmer%20Dave%E2%80%99s%20in%20Dracut%20(got%20it%20at%20the%20Wakefield%20Farmer%E2%80%99s%20Market)%20a%20week%20before%20I%20made%20the%20parm,%20so%20it%20was%20not%20%E2%80%9Cjust%20picked.%E2%80%9D%20%20I%20have%20read%20conflicting%20theories%20about%20sweating%20eggplant.%20%20I%20think%20I%20may%20not%20bother%20with%20it%20in%20the%20future.%3C/p%3E%3Cp%3EOH%20%E2%80%93%20upon%20copying%20and%20pasting%20the%20above%20recipe%20into%20this%20post,%20I%20%20realized%20that%20I%20did%20not%20beat%20the%20egg%20before%20adding%20it%20to%20the%20cheese%20mix.%20Actually,%20I%20just%20threw%20everything%20in%20all%20together%20although%20it%20says%20to%20add%20the%20egg%20and%20basil%20after%20mixing%20the%20cheeses.%20It%20came%20out%20fine,%20though.%20%20I%20am%20thinking,%20however,%20that%20I%20will%20next%20time%20try%20an%20egg%20bath%20for%20the%20eggplant%20and%20beat%20the%20egg%20used%20for%20that.%20%20hmmm.%20%20%20I%20might%20want%20to%20just%20duplicate%20what%20I%20did%20here%20to%20make%20sure%20it%20is%20a%20winner.%20We%20will%20all%20have%20to%20wait%20and%20see%20what%20I%20actually%20decide%20to%20do%20next%20time.%3C/p%3E%3Cp%3EThe%20other%20variation%20is%20that%20I%20made%20my%20own%20pasta%20sauce,%20using%20a%20Cooks%20Illustrated%20recipe%20using%20canned%20crushed%20tomatoes%20and%20varying%20it%20by%20adding%20mushrooms%20and%204%20fresh%20tomatoes%20from,%20in%20this%20case,%20the%20plants%20in%20our%20bedroom%20and%20dining%20area.%3C/p%3E%3Cp%3EYes,%20we%20still%20have%20homegrown%20tomatoes,%20as%20well%20as%20bell%20and%20chili%20peppers.%20%20And,%20my%20sage,%20rosemary,%20and%20thyme%20plants%20are%20happy,%20the%20two%20former%20ready%20to%20winter%20over%20in%20the%20bedroom%20for%20a%20second%20time.%20%20Now%20I%20need
