Ingredientes

  • 10 ounce frzn minced spinach thawed overnight in the refrigerator, squeezed dry
  • 8 lrg Large eggs, beaten
  • 2 tsp dry basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 c. grated Parmesan cheese
  • 2 x plum tomatoes, diced

  2. Begin by preparing the Large eggs. While the cheese is melting in the last step.
  3. toast English muffins and slice oranges. Arrange the Large eggs, muffins and oranges on separate plates or possibly on a single large platter. Pass apple butter to spread on the muffins instead of regular butter.
  4. Add in Large eggs, basil, salt and pepper to large, lightly oiled nonstick skillet over medium-high heat. Cook, stirring with spatula, till Large eggs are almost set.
  5. Reduce heat to medium low.
  6. Add in spinach to Large eggs, working quickly with fork to break up spinach and mix into Large eggs.
  7. Add in cheese; stir to combine. Top with tomatoes. Cover pan and remove from heat. Let stand till cheese melts, about 5 min.
  8. Makes 4 servings.
