I can't believe that it's been over a week since I last posted a recipe! It also seemed as though Easter was just a few weeks away-- and now, I realize that it's in just a few days.
It's that time of year, when work becomes really hectic until the Class of 2013 marches to Pomp and Circumstance. Once again, I will wave farewell to the students who have grown near and dear to my heart over the last four years. I am so looking forward to Spring Break, so that I can take a little breather from the business of work. I'm planning to stay-cation and to do a little catch up on chores. I have a backlog of savory recipes and baked goods that I'm anxious to share with all of you.

,%20dijon%20mustard%20and%20brown%20sugar.%20%20I%20didn't%20measure,%20but%20I%20can%20tell%20you%20I%20use%20about%201%20cup%20of%20pineapple%20jam,%203/4%20cup%20of%20brown%20sugar%20and%20a%20couple%20healthy%20tablespoons%20of%20Dijon%20mustard.%20%20I%20slathered%20the%20ham%20and%20loosely%20covered%20it%20in%20foil.%20%20Following%20the%20instructions%20that%20came%20with%20the%20ham,%20I%20set%20it%20on%20a%20roasting%20rack%20and%20warmed%20it%20at%20about%20275F%20for%20about%201-1/2%20hours.%20%20I%20removed%20the%20foil%20during%20the%20last%20hour%20and%20I%20though%20the%20ham%20glazed%20nicely.%20I%20was%20surprised%20at%20the%20drippings%20I%20found%20in%20the%20roasting%20pan.%3C/p%3E%3Cp%3EI%20poured%20the%20drippings%20into%20a%20pot,%20add%20a%20bit%20of%20chicken%20stock%20and%20then%20made%20a%20quick%20cornstarch-water%20blend.%3C/p%3E%3Cp%3EThis%20made%20a%20lovely%20thick%20gravy,%20that%20I%20hadn't%20planned%20on!%3C/p%3E%3Cp%3EI%20love%20asparagus%20steamed,%20sauteed%20or%20roasted.%20%20Roasted,%20I%20think,%20is%20my%20favorite%20way%20to%20prepare%20and%20serve%20them.%20%20I%20simply%20cut%20off%20the%20woody%20ends,%20sprinkle%20them%20with%20coarse%20salt%20&%20fresh%20cracked%20pepper%20and%20drizzle%20them%20with%20olive%20oil,%20then%20toss%20them%20to%20coat%20evenly.%20%20This%20time,%20I%20sliced%20a%20couple%20of%20lemons%20fairly%20thin%20and%20laid%20the%20asparagus%20on%20top%20of%20a%20few%20of%20them,%20then%20spread%20the%20remaining%20lemon%20on%20top.%20%20I%20roasted%20them%20on%20450F%20for%20about%2010%20minutes,%20until%20they%20were%20just%20becoming%20tender,%20but%20not%20super%20soft.%3C/p%3E%3Cp%3EI%20loved%20how%20the%20asparagus%20had%20a%20delicate%20notes%20of%20lemon.%20%20Perfect.%3C/p%3E%3Cp%3EI'm%20not%20a%20fan%20of%20going%20out%20for%20Easter%20Brunch,%20so%20this%20Sunday,%20I'll%20most%20likely%20make%20this%20same%20menu.%20It%20feeds%20a%20crowd,%20doesn't%20wear%20me%20out%20too%20much%20and%20I%20can%20put%20my%20feet%20up%20and%20savor%20a%20whole%20week%20of%20vacation.%3C/p%3E%3Cp%3EI'll%20be%20busy%20in%20the%20kitchen,%20making%20some%20recipes%20I've%20been%20anxious%20to%20experiment%20with.%20But,%20first,%20I%20need%20to%20finally%20edit%20and%20organize%20recipes%20I've%20been%20posting%20teaser%20photos%20of%20on%20my%20Facebook%20Fan%20Page.%3C/p%3E%3Cp%3Ethe%20end%20of%20each%20recipe%20post.%20If%20you%20cannot%20view%20it,%20you%20might%20be%20using%3C/p%3E%3Cp%3Ean%20older%20version%20of%20Internet%20Explorer.%20You%20should%20be%20able%20to%20view%20my%3C/p%3E%3Cp%3Erecipe%20cards%20with%20Safari,%20Mozilla,%20Google%20Chrome%20and%20Internet%20Explorer.%3C/p%3E%3Cp%3EIf%20you%20still%20can't%20view%20the%20recipe%20card,%20all%20of%20my%20recipes%20are%20stored%20on%3C/p%3E%3Cp%3EHappy%20Spring%20and%20Happy%20Easter!%3C/p%3E){kind=link}
