I love the recipe and totally recommend that you make it, but I have to be honest — I’m rarely organized enough to make these buns in time for dinner.Any yeasted dough recipe takes time, but butter-packed brioche dough requires extra rising time in the refrigerator to make the super-sticky mixture manageable.Sometimes I need freshly baked buns that don’t require quite as much special care or advance planning.These Easy Hamburger Buns fit the bill! Tender and delicious, they hold up well with juicy, flavorful hamburgers, and they’re ready to eat in just over two hours.Because the dough only contains a small quantity of butter, it’s easy to work with after a traditional rise at room temperature.  The soft, supple dough is easy to shape, and the buns bake up beautifully with an egg wash and sesame seeds or simply plain and unadorned.I like to use whole wheat flour in the dough for a bit of texture and visual appeal, but if you don’t keep it on hand, just sub in unbleached all-purpose flour in its place.This recipes lends itself especially well to hand preparation. If you don't have whole wheat flour, just sub in an equal portion of unbleached all-purpose flour.Author: Suzanne CowdenRecipe type: BreadsServes: 6 to 8IngredientsDough1 cup warm water (about 110° F)1 tablespoon active dry yeast¼ cup, plus a pinch of granulated sugar, divided1 cup whole wheat flour2 tablespoons butter, melted and cooled slightly1 large egg, lightly beaten1 teaspoon salt2 to 2¼ cups unbleached all-purpose flourTopping1 large egg2 tablespoons watersesame or other seedsInstructionsCombine warm water, yeast, and a pinch of sugar in a large bowl. Let sit until foamy, about 5 to 10 minutes.Add whole wheat flour, ¼ cup sugar, butter, egg, and salt to the bowl. Mix with a wooden spoon until well combined. If using a stand mixer, stir with the paddle attachment to combine.Mix in remaining flour about ½ cup at a time until the mixture clears the sides of the bowl. Knead the dough on a floured surface until soft and smooth, adding flour as needed to keep the dough from sticking. If using a mixer, switch to the hook attachment and knead until the dough is smooth and silky.Place the dough in a lightly greased bowl and turn to coat. Cover and let rise for about an hour.Divide the dough into 8 evenly-sized pieces. On an un-floured surface, shape the dough into tight rounds and then flatten the balls into 4-inch disks.Place the buns several inches apart on greased baking sheets. Cover loosely with plastic wrap and let rise for about 30 minutes.Preheat oven to 375° F.Whisk egg and 2 tablespoons water to make an egg wash. Brush it lightly over risen buns. Give the tops another brush of the wash before sprinkling generously with seeds.Bake until golden brown, about 12 to 15 minutes. Remove from the oven and cool on a rack.
