Receta Easy Master (Formula) Recipe for Muffins

That we love muffins in our house is an understatement! We absolutely crave muffins! My kids always beg me to make them and often remind me, "Mom, you haven't made muffins in a while." My little boy particularly loves them as every time his school asks for a volunteer to bring food for whatever school activity there is he is more than eager to sign me up. He beams every time he comes home from class and says, "Mom, everyone loved your muffins." This truly makes baking muffins fun and totally worthwhile. Just to see him smile and be proud of his mom is more than enough!
Through the years, I have sort of developed my own formula for baking muffins which results in very moist and truly tasty muffins. It's pretty quick and easy to do and the possibilities are endless because you can add pretty much any of your favorite fruits (fresh, frozen or dried!) and even bring the deliciousness to the max by adding either white or regular chocolate to the mix. No need to use any electrical mixer as it's all done by hand, too!
I don't have enough space to add all the muffin photos that show what we have used this batter for (it would be a very long post otherwise!) - blueberries, cranberries, raspberries, mangoes, etc just to name a few. So the limit is really left to your imagination! This makes a batch of 12 muffins and maybe up to 16 even depending on the size of your muffin cups. I fill the liners to the top to create a nice dome that looks like bakery-style muffins.

Easy Master (Formula) Recipe for Muffins

Tried and tested delicious master recipe for muffins. Add your favorite fruits and throw in some chocolate, too! This formula works and always comes out moist and yummy! No need for any mixer.
Ingredients
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 2 large Eggs, room temperature
- 1 cup sugar (you can use either white or brown or a mix of the two - I used half of each)
- 1 cup / 8 oz Yogurt (or Sour Cream)
- 1/3 cup Oil (vegetable or coconut)
- 1 teaspoon Vanilla extract
- 1 1/3 cups fresh fruit of your choice, chopped (ex. strawberries, raspberries, cranberries, etc.)
- 3/4-1 cup white or regular chocolate chips (optional)
Instructions
Preheat oven to 400F/200C. Line a 12 muffin pan with paper cups or muffin liners.
In a large mixing bowl, whisk together the flour, baking powder and salt. Set aside. In another bowl beat the eggs. Add the sugar, yogurt (or sour cream), oil and vanilla extract to the beaten eggs and mix together.
Mix the wet and dry ingredients until combined. Fold in the fruits and the chocolate chips, if using.
Spoon the mixture into the prepared muffin pan dividing it equally.
Bake for about 18-22 minutes or until a tester comes out clean.
Remove from the oven and after about 5-8 minutes (when it's cool enough to handle) transfer each muffin to a wire rack to cool completely. Enjoy!
