What? Another pinto bean recipe?

The other day I didn't want to go to the store, so I made do with what I had on hand. Yum!

Ingredientes

  • 1 lb. dry pintos
  • 4 oz (1/2 cup) tomato sauce
  • 1/2 small onion, chopped
  • 2 tbs. chopped bell pepper
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin powder
  • 2 cups chicken stock
  • oil
  • salt and pepper to taste
  • tbs. chopped cilantro
  • optional: chopped jalapeno

Direcciones

  1. Quick Soak Method: Bring beans to boil for 1 minute in 2 qts. water.
  2. Turn off heat, cover, let sit an hour or more.
  3. Drain.
  4. Saute the chopped onion and bell pepper in some oil until lightly browned.
  5. Add everything to a pot, simmer, covered for about an hour and a half.
  6. If it needs more liquid, add more stock.
  7. Will freeze.
