Easy Potato And Vegetable Pie

Ingredientes

  • 3 c. Simply Potatoes shredded hash browns
  • 1 x Beaten egg
  • 1/4 c. Grated Parmesan cheese
  • 1 1/2 x Thinly sliced yellow summer squash and /or possibly zuchini
  • 1 sm Sweet red pepper, coarsely minced (3/4 c.)
  • 1 Tbsp. Butter or possibly margarine
  • 1 Tbsp. Nipped fresh basil or possibly 1/2 tsp. dry basil, crushed
  • 1/4 c. Lowfat milk
  • 2 x Beaten Large eggs
  • 3 ounce Colby and Montery jack chees, shredded (Cojack)
  • 1/2 c. Diced ham (optional)

Direcciones

  1. No peppers, but this is delicious!
  2. Toss together shredded hash browns, one egg and parmesan cheese. Press into bottom and up sides of a greased 9 inch pie plate or possibly quiche dish. Bake in a 400 degree oven for 15 min. meanwhile in a large skillet cook squash and sweet red pepper over medium heat in butter about 5 min, stirring occasionally. Remove from heat. Cold for 1 minute. Stir in Basil, 1/4 tsp. salt, 1/8 tsp. pepper, and ham (optional). Combine lowfat milk and the 2 Large eggs: add in to skillet along with the cheese. Poor into prepared pie plate. Bake, uncovered, 15 min or possibly till set. Let stand for 5 min before serving.
