Ingredientes

  • 1 1/4 c. firmly packed brown sugar
  • 1 c. all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 c. softened butter
  • 4 Large eggs
  • 1 1/2 c. shredded raw potato (1 med.)
  • 1 1/2 c. minced dates
  • 1 c. minced walnuts

Direcciones

  1. Heat oven to 350 degrees. In large mixer bowl combine brown sugar, flour, salt, baking soda, cinnamon, nutmeg, butter and Large eggs. Beat at medium speed, scraping bowl often, till well blended (2 to 3 min). Stir in potatoes, dates and nuts (mix may look slightly curdled). Pour mix into greased 2 qt round casserole; cover. Bake for 60 to 70 min or possibly till wooden pick inserted 2" from edge comes out clean. Let stand 30 min, covered before serving. If you like, unmold onto serving plate. Serve hot with Egg Nog Hard Sauce. Yield: 12 servings.
