Michaela is a stay at home mom to 4 kids and is married to the love of her life for over two decades now. As I read Michaela's "about page" it was uncanny exactly how much we had in common! I knew once I started browsing her recipes, it was going to be a tough choice for me to narrow it down to one recipe. We both seem to like many of the same kinds of recipes! Michaela and I have sort of "known" each other for some time now through mutual blog sharing groups. I've always loved Michaela's recipe choices and have drooled more than once over the recipes she shares, but I have never had the opportunity to dive into her blog and make something from it.
So I started making a list of recipes to make from her site. When I was done, I had 20 or so recipes that I wanted to try! HAHA But...since I can only present ONE recipe today, I decided to go with this extraordinarily delicious strawberry cake recipe. It's called Strawberry Cake on her blog. Micheala explains that this is a cake recipe that she received from a friend. (Aren't those the best kind of recipes?) She does frost her version, and you can find the recipe for the strawberry frosting HERE. I knew I didn't want to frost my cake but I couldn't decide if I wanted to just dust my cake with powdered sugar or glaze it, so I just did both!
Let me tell you, we LOVED this cake! It is just bursting with BIG strawberry flavor and that color...OH MY....just gorgeous! I also love that this cake starts with a boxed mix. I am a huge fan of doctoring up boxed cake mixes and turning them from ordinary into something extraordinary and this cake recipe does exactly that.
I did reduce the oil, increase the fruit, and use Sugar Free gelatin mix in this recipe, which is a little different from the original. I also did not frost this cake with the frosting Michaela used. I made these changes to make this recipe a little more diet friendly. This cake will be making more appearances at my house in the future! I also will be finding some time to make a few other recipes from An Affair From the Heart....like Grandma's Baked Beans, Grown Up Orange Julius, and Crock Pot French Onion French Dip Sandwiches in the upcoming weeks and put a dent in that long list of "must make" recipes I made!

Easy Strawberry Bundt Cake

A boxed cake mix is transformed into a beautiful PINK moist strawberry cake that is BURSTING with strawberry flavor!
Ingredients
- 1- 16 oz. boxed white cake mix
- 3 TBS all purpose flour
- 3 large eggs
- 3/4 cup water
- 1/2 cup canola oil
- 1- 1 oz. package of Sugar Free strawberry flavored gelatin
- 3/4 cup chopped, frozen strawberries, partially thawed
Instructions
Preheat oven to 350 degrees F. Spray non-stick surfaced 10 cup bundt pan with cooking spray. Set aside.
In large bowl, combine all ingredients except strawberries and mix with electric mixer on low until combined, then on high for about 2 minutes. Fold in strawberries. Pour into prepared bundt pan and smooth surface.
Bake for 40 - 45 minutes or until toothpick inserted into center comes out clean. Cool in pan for 10- 15 minutes, then invert onto serving plate and cool completely.
Once completely cooled, glaze with a powdered sugar/milk glaze or dust with powdered sugar or both!
Yield: 16 servings

Cook time: 00 hrs. 45 mins.
Total time: 55 mins.
