I'm back in the kitchen y'all! And let me just say…it feels wonderful to be back!

Culinary school took up so much of my time that it was crazy…with a capital C! I'm not going to bore with you the details, however, if you have some free time or are curious, just follow this link and it will take you right to the details of everything that has happened.

I came across this recipe for sugar cookie cut outs around Christmas time of last year. I made them once to test out the recipe. Then made them again when my sister and her family came over for a visit.

We had a total of 5 kids in the house (including ours)….and ALL of them asked me a gazillion times to make more. In total, I've made them 4 times since December. You know a recipe is that good when you make it over and over again.

Up until then, I didn't think anything could touch my original recipe for sugar cookies (which can be found here). I was so wrong about that! We actually enjoy these more and will probably stick with them from now on.

These cookies are not to sweet, nor are they not to bland. They are perfect! They are nice and crispy on the outside and soft/chewy on the inside and they have my favorite ingredient, almond extract.

Since Valentine's Day is around the corner, I decided to make heart shaped ones. However, you can cut them out and decorate them for any season that you wish.

There are pink splotches on the cookies because I had to make my own pink colored sugar. I didn't wait to place those cute little white beads on until after they were finished baking so I think I'll do that next go round. I also added an extra two tablespoons of flour to the dough because we live in an high altitude area. This caused the cookies to puff up a little more then usual. But hey, we aren't going for looks here, we're going for taste…right?

In any event, they still rock, no matter how they may look :)

Easy Sugar Cookie Cut-Outs

(makes 24-30 cookies)

Ingredients:

Directions:

1. In a large mixing bowl, cream together butter and sugar until light and fluffy, around 2 minutes. Add in egg, vanilla extract, and almond extract. Mix until well combined.

2. In a separate mixing bowl, combine flour, baking powder, and salt. Slowly add the flour mixture to the butter mixture and mix until completely combined.

3. Divide the dough in half and place each half in a plastic bag. Place the plastic bags in the fridge to chill for an hour.

4. Preheat oven to 350 degrees. Take dough out and roll them between two sheets of parchment paper.

5. Cut dough into shapes, about 1/4 inch thick. Transfer cut outs to a cookie sheet lined with parchment paper. Sprinkle with colored sugars and decorations.

6. Bake for 8-12 minutes. Cool on baking sheet for 5 minutes then transfer to a baking rack until they are cooled completely. Cookies should look a little under baked when pulled out of the oven. They will firm up over time.
