Ingredientes

  • 1 lb Grnd Beef, Extra Lean, (or possibly grnd turkey)
  • 1/2 c. Minced onion
  • 1 pkt (1 1/4 Ounce) taco seasoning mix
  • 5 c. Tomato juice Low fat lowfat sour cream Shredded lettuce Minced green onions Minced tomatoes Low Fat Cheddar Cheese, Shredded Tortilla chips, preferably baked

Direcciones

  1. Cook grnd beef and onion over medium heat, stirring occasionally, till beef is no longer pink; about 6-10 min. Drain off any fat. (I have my students dump it into a colander then back into the pan because they cannot drain it effectively otherwise) Stir in seasoning mix and continue cooking for 1 minute. Stir in tomato juice. Continue cooking, stirring occasionally till heated through - about 5 min. To serve, ladle soup into bowls.
  2. Each individual can then add in additional toppings.
  3. NOTES :* May substitute 1 tsp. onion paste for the minced onion, if you like. This comes in a tube like anchovy paste, is really quick to use and eliminates the need to have students chopping with sharp knives.
