I’ve made them before and my intention was to use blueberries again and I started with frozen ones. In my haste to satisfy my sweet tooth, I didn’t let the berries thaw adequately. What I ended up with were a few berries that were too icy to mix in properly plus some were split and the juice leaked a bit into the batter. I’m not a fan of berry stained batter in my baked goods. So, on to plan B. I still had several bags of Hershey’s baking chips left from the holidays and decided to use the S’mores mix. Using the same recipe with the Hershey’s S’mores baking chips produced scrumptious light and tender scones. Using a combination of cake mix and flour contributes to the scones tenderness. The leaveners are already in the cake mix and the addition of flour balances it so that you don’t end up with something that tastes like cake or a biscuit. I baked them on my Silpat, but a parchment lined baking sheet would work just as well. My first thought was to serve them as is. I don’t know why I even entertained that thought. A scone without a glaze is just a high-tech biscuit. To further enrage and at the same time help my dentist pay her bills, I glazed my S’mores scones with a simple white chocolate glaze. Easy Tips for Tender Scones Cold butter is ideal because it gets broken down into small pieces throughout your dough. Butter is about 18 percent water, so steam is released resulting in a lighter tender baked good. To mix the cake mix, flour, and butter, a pastry cutter works best. Make sure to wipe it clean of dough with your hand as needed. Don’t overmix After mixing shape the dough into a larger disc for a moister scone. Cut it into eighths or score it into eighths and break it after it’s baked. Watch the baking time carefully so the scones don’t overbake which will yield dry ones. Ingredients 1 ¼ cup White Cake Mix 1 ¼ cup flour (plus extra for dusting) 8 TBS of cold butter 12 oz pkg S’more baking chips ¾ cup milk 1 cup powdered sugar 2 ounces white chocolate, chopped and melted 1 TBS milk ½ tsp vanilla Instructions Preheat the oven to 400ºF and prepare a baking sheet by lining it with parchment paper or a silicone mat. Mix the cake mix and flour in a large bowl using a pastry cutter or two knives to cut in the cold butter until the mixture looks crumbly. Gently mix in the S’mores baking chips. Make a well in the center of the bowl and pour in the milk. With a wooden spoon and a light hand, mix the milk into the flour/S’mores dough being careful not to overwork it, mix only until it just forms. To make things easier, try to keep the dough all in the center of the bowl as if you're forming a dough ball. Dust a small handful of flour over the dough in the bowl, and with well-floured hands, form it into a ball. Move it to the prepared baking sheet; the dough will be sticky and that’s OK. Use a greased knife to make eight wedges. Give the knife a spritz with non-stick baking spray in between cuts so the dough doesn’t stick. Bake for 20-25 minutes until a toothpick inserted comes out clean. Loosen the edges of the scones with a large spatula and move it to the serving plate.
