%20of%20the%20season%20in%20this%20week's%20produce%20box%20and%20we%20also%20happen%20to%20have%20potatoes%20and%20garlic%20left%20over%20from%20a%20previous%20produce%20box,%20it%20seemed%20like%20the%20perfect%20time%20to%20finally%20give%20this%20yummy%20recipe%20a%20try.%3C/p%3E%3Cp%3EThe%20tian%20originated%20in%20Provence%20in%20the%20south%20of%20France%20and%20is%20similar%20to%20a%20gratin%20except%20for%20the%20fact%20that%20it%20does%20not%20include%20bread%20crumbs%20or%20cheese%20(though%20you%20can%20top%20it%20with%20gruyere%20if%20you%20like%20which%20is%20also%20very%20tasty).%20The%20baking%20concentrates%20the%20flavors%20of%20the%20vegetables%20so%20it%20is%20a%20great%20dish%20in%20which%20to%20showcase%20truly%20tasty%20veggies%20(but%20not%20a%20great%20dish%20to%20make%20if%20you%20have%20to%20use%20supermarket%20fare%20which%20often%20tends%20to%20taste%20kind%20of%20bland.)%3C/p%3E%3Cp%3EThe%20traditional%20recipe%20calls%20for%20leeks%20but%20since%20we%20received%20red%20onions%20in%20our%20box,%20I've%20substituted%20those,%20instead.%20Some%20recipes%20seem%20to%20call%20for%20potatoes%20while%20others%20do%20not%20but%20I%20love%20potatoes%20so%20I've%20included%20them%20below.%20If%20you%20don't%20have%20thyme%20on%20hand,%20you%20can%20substitute%20basil%20or%20oregano.%3C/p%3E%3Cp%3EThe%20amounts%20of%20each%20thing%20below%20are%20fairly%20rough;%20the%20trick%20is%20to%20use%20freshly%20picked,%20high-quality%20veggies%20and%20to%20cut%20them%20thinly.%20The%20recipe%20below%20is%20a%20mix%20of%20the%20Martha%20Stewart%20recipe%20and%20one%20I%20found%20on%20Slashfood%20with%20a%20few%20adjustments%20of%20my%20own.%3C/p%3E%3Cp%3EThis%20can%20be%20a%20main%20dish,%20albeit%20a%20fairly%20light%20one,%20but%20it%20also%20goes%20very%20well%20with%20grilled%20meats%20or%20roast%20chicken,%20a%20green%20salad%20and%20some%20fresh%20bread%20to%20sop%20up%20the%20juices.%20Bon%20appetit!%3C/p%3E%3Cp%3EProven%C3%A7al%20Vegetable%20Tian%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Cut%20a%20piece%20of%20parchment%20paper%20to%20the%20size%20of%20a%20two-quart%20glass%20or%20ceramic%20baking%20dish.%20Set%20aside.%20Butter%20the%20inside%20of%20the%20dish%20and%20set%20aside.%20Preheat%20the%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3E2.%20Slice%20the%20onions%20and%20peel%20and%20mince%20the%20garlic.%20(If%20you're%20using%20leeks,%20cut%20the%20root%20end%20off%20and%20chop%20where%20the%20green%20begins%20then%20slice%20the%20white%20part%20and%20rinse%20in%20cold%20water%20to%20remove%20any%20sand/dirt.%20Let%20dry%20in%20a%20collander.)%3C/p%3E%3Cp%3E3.%20Remove%20the%20ends%20from%20the%20zucchini%20and%20aubergines%20and%20discard.%20Cut%20each%20crosswise%20into%20coins%201/8-inch%20thick.%20Remove%20the%20stem%20ends%20from%20the%20tomatoes%20and%20discard.%20Cut%20each%20crosswise%20into%20rounds%201/8-inch%20thick.%20Scrub%20and%20dry%20the%20potato(es)%20and%20cut%20into%201/8-inch%20thick%20slices.%3C/p%3E%3Cp%3E4.%20Coat%20a%20small%20pan%20with%20a%20good%20dose%20of%20olive%20oil%20and%20heat%20until%20shimmering.%20Add%20the%20garlic%20and%20swirl%20to%20coat.%20Gently%20add%20the%20onions%20(or%20leeks).%20Cook,%20stirring%20frequently,%20until%20the%20onions%20(or%20leeks)%20have%20begun%20to%20soften%20and%20the%20garlic%20has%20released%20its%20fragrance,%20approximately%20two%20to%20five%20minutes.%3C/p%3E%3Cp%3E5.%20Carefully%20spread%20the%20onion/leek-garlic%20mixture%20across%20the%20bottom%20of%20the%20baking%20dish.%20Sprinkle%20with%20salt%20and%20a%20few%20grindings%20of%20fresh%20black%20pepper;%20strip%20the%20leaves%20from%20one%20of%20the%20sprigs%20of%20thyme%20and%20sprinkle%20over%20the%20mixture.%3C/p%3E%3Cp%3E6.%20Layer%20the%20zucchini,%20aubergines,%20potato,%20and%20tomato%20on%20top%20of%20the%20onion/leek-garlic%20mixture,%20alternating%20each%20and%20overlapping%20slightly.%20I%20made%20sure%20to%20put%20the%20juicier%20things%20(squash%20and%20tomato)%20between%20the%20drier%20veggies%20(eggplant%20and%20potato)%20to%20keep%20the%20whole%20thing%20consistently%20moist.%20If%20working%20with%20a%20square%20or%20rectangular%20dish,%20layer%20in%20rows;%20if%20working%20with%20a%20circular%20or%20oval%20dish,%20work%20in%20fans%20from%20the%20center.%20Drizzle%20with%20a%20two-count%20of%20olive%20oil%20and%20splash%20with%20the%20wine.%20Sprinkle%20with%20salt%20and%20a%20few%20grindings%20of%20fresh%20black%20pepper;%20strip%20the%20leaves%20from%20the%20remaining%20thyme%20and%20sprinkle%20over%20the%20casserole.%3C/p%3E%3Cp%3E7.%20Butter%20the%20cut%20parchment%20and%20carefully%20place,%20buttered%20side%20down,%20on%20top%20of%20the%20vegetables.%20Bake%20for%2035%20to%2045%20minutes,%20depending%20on%20your%20oven,%20until%20the%20vegetables%20are%20soft%20but%20not%20mushy%20while%20the%20edges%20are%20nicely%20crisp%20and%20brown.%3C/p%3E%3Cp%3EA%20few%20other%20recipes%20you%20m
