With the kids back-to-school already and fall sports and activities just beginning, this time of year can be a very busy one for families! Effortless Meal solutions are here to make your life a little easier. Who doesn't love a complete meal you can have on your table in minutes that includes this delicious Easy Coca-Cola Cake for dessert?

That's right, a complete effortless meal that includes a yummy chocolate dessert! I know it sounds like a lot of work, but I'll show you that it isn't!

I've been a mom now for 23 years. I know all about time crunches this time of year, especially with all the after school activities. Being a chauffeur for dance lessons, sports practice and music lessons can interfere with your ability to get a meal on the table. One of my solutions for an effortless meal includes a quick stop to the Walmart deli for a Marketside Pizza Meal (a 16"pepperoni or cheese pizza and a 2 L Coca-Cola product), a Marketside Rotisserie Chicken Meal (a 29 oz. Rotisserie chicken, 2 lb. side and a 2 L Coca-Cola product) or a Marketside Sandwich Meal (a 6" sandwich, bag of chips and a 16 oz. Coca-Cola product).

My favorite Effortless Meal is the Marketside Pizza Meal. I purchased a Marketside Five Cheese Pizza in the deli section and grabbed a couple of 2 Liter bottles of Coke and Diet Coke. Each member of my family likes different toppings on their pizza, so I always buy a cheese pizza and then customize sections with toppings for each person. While I was shopping, I also picked up a box of chocolate fudge cake mix to make a quick and easy Coca-Cola cake for dessert. Because really, what's life without a little dessert, right?

The first time I tried Coca-Cola Cake was at a restaurant a few years back and I was in LOVE with the first bite. Sure, you can find many "from scratch" recipes for Coca-Cola Cake on the internet, but I wanted to streamline it so you can have it ready in no time for dinner tonight! Since it's best eaten a warm with a scoop of vanilla ice cream, this cake is the perfect accompaniment for this effortless pizza meal of mine!

Take a look at what you need to do to get dinner on the table effortlessly:

You start by making the cake. You only need three ingredients to get the cake going in the oven: Chocolate fudge cake mix, an egg and 1 1/2 cups of Coke (Regular or Diet).

Everything gets whisked together (no need to bring out that electric mixer) and then poured into the prepared pan and baked as directed.

Once the cake is done, you remove it from the oven to a wire rack to cool and turn the oven up a notch for the pizza.

Customize the pizza with whatever toppings your family likes. Here I have a vegetarian section for my youngest son, a pepperoni, mushroom and olive section for myself and for my husband, a pepperoni and banana pepper section.

Bake the pizza according to the directions. As you can see, it doesn't take long at all!

While the pizza is baking you make the glaze and pour it on the cake. It will be thin, but will set up just a little while you are enjoying the pizza.

Mmmmm....pizza perfection!

Easy Coca-Cola Cake

Easy Coca-Cola Cake that starts with a boxed cake mix!

Ingredients

Preheat oven to 350 degrees F. Spray a 13" x 9" pan with cooking spray. Set aside.

Whisk together the cake mix, 1 1/2 cups Coca-cola, and egg until combined. Pour into prepared pan and bake for 25 -30 minutes, or until toothpick inserted into center comes out clean.

For glaze, heat 1/2 cup Coca-Cola in a medium saucepan to a boil and turn down to a simmer. Simmer until liquid reduces by about half (5 -10 min.) Take off heat. Add in the cubed butter, cocoa and kosher salt. Whisk until butter is melted. Whisk in sifted powdered sugar until thick and glaze like. Pour over warm cake. Allow to sit for 10 min. to allow glaze to set up a bit. Enjoy warm, or allow to cool to room temperature.

Yield: 16 servings

Prep Time: 00 hrs. 10 mins.

Cook time: 00 hrs. 30 mins.

Total time: 40 mins.
