Egg Bhurji or Anda Bhurji is a healthy skinny Indian scrambled egg with very less oil. Its a quick and popular Indian breakfast recipe, perfect for people on the go and bachelors alike.

A very filling egg recipe which makes a delicious sandwich filling or even as a slider. I pack this for my kids and husbands lunch and always feel it is very filling and healthy. The best part is it is a one pan meal....no whipping up eggs, no cleaning of forks or whisk or even a bowl....and I like that kind of cooking....less cleaning and washing :)

I love to fill it up on buns or even serve as an open sandwich.

This recipe is for one serving and with just one egg....feel free to increase accordingly.

Ingredients:

Egg: 1.

Onion: 1, medium.

Tomato: 1, medium.

Green chillies: 1 or 2, depending on your tolerance level.

Salt: A big fat pinch or depending on your taste.

Oil : 1/2 tbsp.

One sprig of green onion or spring onion to garnish.

Method:

Lets begin.

Chop up the onion, tomato, and green chilli.

Heat a pan or kadai or wok with 1/2 tbsp of oil...you can add more if you are not that calorie conscious...the more oil, the more taste :) Add in the onion and chilli....mix and stir for a min or two.

Then add in the tomatoes. Give it a stir.

Put the flame on low and then crack open the egg into this. Immediately sprinkle salt

With flame on medium or high.....stir vigorously, so that the eggs break and are somewhat like beaten....

Keep stirring until the eggs are cooked and it becomes scrambled and firm.

If you are using on buns, cut the buns into half and slightly toast them on a pan with a drizzle of butter or even without it if you are calorie conscious.

While they are toasting up...chop up the green part of the onions

And sprinkle them on top of the egg. This gives out a unique flavor...and is optional....you can make without green onion also.

Serve on bread as sandwich or on buns as sliders.
