Receta Egg Chapati (Kothu Roti)
Ingredients:
- Wheat Flour - 250 gms
- Eggs - 6
- Tomatoes - 2, chopped
- Green Chillies - 2, chopped
- Onions - 3, chopped
- Curry Leaves - 1 bunch
- Coriander Leaves - 1 bunch
- Oil - 3 tsp
- Salt as per taste
- Turmeric Powder - 1/4 tsp
Method:
1. Mix the wheat flour with enough water and keep aside for 30 minutes.
2. Pinch small balls of the dough and roll them into chapatis.
3. Heat a tawa over medium flame.
4. Cook the chapatis using little oil and keep aside to cool.
5. Once cooled, chop the chapatis into small strips.
6. Heat oil in a pan.
7. Saute the onions, tomatoes, curry leaves and green chillies for a minute or two.
8. Add salt and turmeric powder.
9. Mix well.
10. Add the chopped chapatis and stir well.
11. Break the eggs into the pan and cook for 2 to 3 minutes.
12. Garnish with coriander leaves.
13. Serve hot.
