Receta Egg Crêpes Stuffed with Spinach and Ricotta; the update
It was a busy week, as they all are, but with a bit more variety (and tragedy).
Mon mari is still working on the ceiling in the second bedroom but should be finished soon.
In preparation we've laid out the next project: the second bathroom.

We took a break from indoor work over the weekend. The weather finally changed from dull, damp gray to sunshine. Perfect for another attempt at rabbit eradication.
We have a little woods on one side of our house that is (was) filled with bunnies.
It was also filled with brambles.
All of those thorny brambles made a lovely bunny habitat.
We decided we should encourage them to move.
The brambles were about shoulder height in the middle and covered an area about 25' by 30'. Mon mari got out the heavy-duty weed trimmer, sharpened the blades and attacked. My job was to take off the top section of tangled brambles so he could get at the underside... and then to rake and haul them all to the burn pile.
It took two days but we cleared it all out.
If you've never had the pleasure of working with brambles - they're thorny, sharp, long and tangles. We both wore heavy sweat shirts, goggles and super heavy duty gloves.
Much as I hate to do it, in a couple of weeks, after they start coming up again, I'm going to spray with a special herbicide just for brambles. They're almost impossible to eradicate and we hope this will at least slow them down. My other choice would be use the trimmer in the entire woods, every week for the rest of my life. If I spray I'll only have to cut once a month or so.
We found three rabbit holes that we filled in.
The little darlin's had their revenge this morning.... They dug up all of my blooming crocus and put several big holes in the lawn.
Wish I could get a spray for bunnies....
Tomorrow is Crêpe Day (or so I'm told). In honor of the occasion, here is my super easy version.
This is a cross between a crêpe and omelet, using more eggs than a crêpe but with the addition of flour to make it sturdier and easier to roll up than an omelet.
Like both, they can be stuffed with anything. Use a light filling for a first course or something more substantial for a light lunch.
- Egg Crêpes with Leeks and Ham
- 3 eggs
- 1 tsp water
- 2 tbs flour
- 2 tsp butter
- 3oz (90gr) fresh spinach
- 1 tsp olive oil
- 3 tbs ricotta cheese
- 2 tbs Greek or plain yogurt
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/2 tsp marjoram
- 1/3 cup shredded cheese
Whisk eggs and water well. Sprinkle flour over the top and whisk well.
Melt 1 tsp butter in a medium nonstick skillet over medium heat. Add 1/2 egg mixture and cook, undisturbed, until dry on top, 3 - 5 minutes. Flip and cook other side briefly. Remove to a plate and repeat with remaining egg mixture. Do not keep warm.
Heat oil and paprika in a large skillet. Add spinach and wilt very slightly. Add ricotta, yogurt, garlic, marjoram and stir will to combine. Fill crêpes, roll and place seam side down in a baking dish. Top with cheese and bake, 10 minutes, 350F (180C), or until cheese is melted and crêpe is heated through.
