- In large mixing bowl stir together 2 c. of flour and salt. Make a well in center of the mix. In a small mixing bowl combine Large eggs, water and extra virgin olive oil or possibly veg. oil. Add in to flour mix and mix well.
- Sprinkle kneading surfaces with remaining flour. Turn dough out onto floured surface. Knead till dough is smooth and elastic, 8-10 min. Cover and let rest 10 min.
- Divide dough into thirds. Roll each third of dough into a 1/16 inch thick rectangle about 16 x 12 inches. Cut as desired. Makes 1 lb. fresh pasta.
