Receta Egg White Omelet

- In a large bowl combine 5 egg whites and 3 Large eggs. Add in water and mix well. Season with salt and pepper.
- In a small bowl combine melted margarine and sesame oil. Place half in a skillet and saute/fry thinly sliced onion, minced green bell pepper, and minced red bell pepper till tender; remove from the heat and set aside.
- In another skillet, heat the remaining oil/margarine mix. When warm and bubbly add in the egg mix and reduce the heat to medium. Push the cooked portion to the center and cook till set. Place the vegetables on top, add in grated mozzarella cheese, and carefully fold on top. Garnish with sliced Italian tomatoes.
- This recipe yields 4 servings.
