Eggless Wheatgerm & Banana Muffins – Healthy Treat Which is Scrumptious too!

Eating healthy meals and including foods which does wonders to your body is no easy task. Our palates are more accustomed to eating what we eat day in and day out. And adding or excluding anything from the regular meal demands a big challenge. The onus invariably falls on the mom to make the recipe more appeasing for her family to at least try out the so called healthy foods. But for these Muffins, I could have never imagined my kids eating wheatgerm and banana which has past its prime! I was really surprised when I saw my kids reaching out for these muffins with a big smile. Chocolate chips were added to deceive them …mission accomplished
wheatgerm..can you see that blackened banana..
Ingredients;
- 1 cup wholewheat flour
- 1/4 cup wheatgerm
- 1/2 cup mashed Banana
- 1/2 cup sugar
- 1/2 cup curd/yogurt
- 1/4 cup oil
- 1/2 tsp. Baking soda
- 1 tsp. Baking powder
- Chocolate chips
Method: Use overripe bananas to make these Muffins. Freeze the overripe bananas till use. Take a large vessel and sift flour, baking powder and baking soda in it. Add wheatgerm in the flour mix. Peel and mash the banana with a fork in another vessel. Add curd, oil and sugar into it. Whisk the mixture till the sugar is dissolved.

Add the wet ingredients into the dry ingredients and fold it lightly.
Preheat the oven at 180 C . Grease a muffin mould and arrange paper cups in it. Pour a small ladle of the batter into each mould and fill it up to 2/3 rd of the capacity. Sprinkle the chocolate chips over each muffin. Bake the Muffins at 180 degree C for about 20 minutes. Take out the muffin tray and let it cool for 20 minutes.
All done!
Serve the muffins with your favorite frosting, jam, chocolate cream or just dust them with powder sugar.

Notes;
Use refined flour if you want more lighter and fluffier muffins.
Replace white sugar with Palm sugar for more nutrition.
Add extra milk or liquid if the batter feels a nit dry. As the consistency of yogurt may vary.
Grated apples in the batter will make these muffins more delicious.
