,%20leftover%20marinara%20sauce,%20feta%20cheese.%3C/p%3E%3Cp%3EI%20made%20the%20stuffing%20in%20a%20skillet,%20but%20then%20was%20faced%20with%20crispy,%20raw%20peppers.%20While%20I%20like%20bell%20peppers%20raw%20and%20also%20tender%20crisp%20in%20a%20stir%20fry,%20I%20want%20my%20pepper%20completely%20tender%20when%20it%20is%20stuffed.%20I%20could%20have%20blanched%20the%20peppers,%20or%20baked%20them,%20but%20I%20decided%20to%20use%20the%20pressure%20cooker.%20In%20only%204%20minutes,%20the%20peppers%20were%20soft%20and%20tender.%3C/p%3E%3Cp%3EThe%20amount%20of%20stuffing%20listed%20here%20will%20accomodate%204%20large%20peppers,%20but%20I%20stuffed%20it%20into%20several%20very%20small%20peppers.%3C/p%3E%3Cp%3EEggplant%20and%20Feta%20Stuffed%20Bell%20Peppers%3C/p%3E%3Cp%3ESlice%20off%20the%20tops%20of%20each%20pepper.%20Remove%20seeds%20and%20membranes%20and%20set%20peppers%20aside.%20Chop%20the%20pepper%20tops%20and%20saute%20them%20in%20olive%20oil%20along%20with%20the%20onions%20and%20eggplant,%20until%20tender.%20Stir%20in%20the%20tomatoes,%20garlic,%20and%20oregano%20and%20saute%20for%20a%20couple%20of%20minutes%20more.%20Add%20rice%20and%20cook%20until%20heated%20through.%20Fold%20in%20the%20feta%20cheese%20cubes%20and%20add%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EStuff%20the%20mixture%20into%20the%20peppers.%20Place%20the%20stuffed%20peppers%20on%20a%20steam%20rack%20that%20will%20fit%20into%20the%20pressure%20cooker%20and%20top%20each%20with%20some%20of%20the%20tomato%20sauce.%20Lower%20the%20rack%20into%20the%20pressure%20cooker%20which%20has%20about%20a%20cup%20of%20water%20in%20the%20bottom.%20Cover%20the%20pressure%20cooker,%20bring%20up%20to%20full%20pressure,%20and%20cook%20for%20four%20minutes.%20Release%20pressure%20and%20serve%20right%20away%20with%20additional%20tomato%20sauce.%3C/p%3E){kind=link}
