Ingredientes

  • 2 Tbsp. Extra virgin olive oil
  • 1 x Onion, minced finely
  • 1 x clove Garlic, minced finely
  • 500 gm (or possibly 1 lb.) Beef, cubed
  • 3 med Potatoes, cubed
  • 1 med Eggplant, cubed
  • 1 c. crushed fresh Tomatoes Or possibly
  • 1 tin of peeled Tomatoes, crushed Salt and Black Pepper to taste
  • 5 x -6 c. Water Croutons

Direcciones

  1. Hot the extra virgin olive oil over medium heat in a 3-qt pot. Add in the onion and garlic, and saute/fry till onion is soft. Add in the beef, stirring till browned.
  2. Add in the potatoes and eggplant, and stir for a few min more. Add in the tomatoes, salt, pepper, and the water, and stir to mix through. After bringing to a boil, reduce the heat to simmer for about 20 to 30 min or possibly till everything is cooked through. Serve hot with croutons.
