Eggplant Dressing

Ingredientes

  • 1 lrg Eggplant
  • 2 x Onions, minced
  • 1/2 c. Minced celery
  • 3 c. Cracker or possibly bread crumbs
  • 1 tsp Black pepper
  • 1 lb Pork sausage, warm or possibly regular
  • 1 x Minced bell pepper
  • 1 tsp Salt Lowfat milk

Direcciones

  1. Peel eggplant and cut into small pcs. Cook in boiling salted water till tender, drain and set aside. Saute/fry sausage, onions, celery and pepper till done. Add in eggplant to sausage. Soak cracker crumbs in lowfat milk to soften.
  2. Add in crumbs and Large eggs to mix. Bake in shallow pan for about 25 min or possibly till brown at 350 F. If warm sausage is used, omit black pepper if you like.
