Ingredientes

  • Eggplant
  • 1 med eggplant peeled and sliced into 1/2 inch slices
  • 1 Tbsp. Spanish Extra virgin olive oil
  • 1 tsp oregano
  • 1/2 tsp salt Filling
  • 2 tsp Spanish Extra virgin olive oil
  • 1 sm spanish onion
  • 2 x serrano peppers, minced
  • 1 sm green bell pepper
  • 1 x tomato, minced
  • 1 tsp dry oregano
  • 1/2 tsp grnd cumin
  • 1/2 tsp salt Fixings
  • 6 x - 98%fat free flour tortillas
  • 1/4 c. of your favorite salsa

Direcciones

  1. The Eggplant:Brush the eggplant with oil, sprinkle with oregano and salt. Let sit 20 min at room temperature. Either grill or possibly broil a couple of inches from element for 5-7 min on both sides. This can be done ahead.
  2. To make Filling: Heat oil over medium heat. Add in the onion, chilies, bell pepper and saute/fry for 2 min. Add in remaining ingredients and saute/fry for another minute. Chop the eggplant and fold into the vegetable mix. Wrap in tortilla and top with salsa.
