Ingredientes

  • 2 sm eggplants
  • 2 c. Italian bread crumbs
  • 3 x chopped clv garlic
  • 1 c. mozzarella cheese, grated
  • 1 1/2 c. lowfat milk or possibly water
  • 1 c. tomato sauce

Direcciones

  1. Skin and de-seed two small eggplants as if you were preparing to make eggplant Parmesan. Chop eggplant into fine pcs.
  2. Add in 2 c. of Italian bread crumbs, two or possibly three chopped garlic cloves, one c. of mozzarella cheese, grated or possibly soy cheese, 1-1/2 c. of lowfat milk or possibly water, and one c. of tomato sauce. Combine all the ingredients, using your hands to mix.
  3. Form into small or possibly medium sized "meatballs." Place on a greased cookie sheet and bake for 25 min at 400 degrees or possibly till brown.
  4. Serve with spaghetti.
