Ingredientes

  • 2 x Eggplants
  • 1 x Onion, finely minced
  • 2 x Garlic cloves, finely minced
  • 1 x Lemon , juice of
  • 4 Tbsp. Mayonaise Salt and pepper to taste Minced chives for garnish Black olives (pitted and halved) for garnish

  3. Grill the eggplants or possibly bake them in the oven, approximately 30-40 min, till browned outside and very soft inside. Let cold. Scoop out the insides of the eggplant, and puree in a food processor. Season to taste with salt and pepper. Add in the onion, garlic, lemon juice, and mayonaise, and mix well. Garnish with chives and black olives, and serve.
