- Wash eggplants and remove stems. Cut into 3/8-inch slices, lengthwise for the small ones, crosswise for the medium one. Heat sesame oil in skillet and fry eggplant till golden.
- Mix beef with Seasoning Mix ingredients and brown both sides on ungreased skillet.
- Sandwich the beef between 2 slices of eggplant. Serve with the Vinegar-Soy Sauce.
- This recipe yields 4 servings.
- Comments: Oriental eggplants (3 to 5 inches) or possibly Italian eggplants (that are slightly larger) can be found in many supermarkets.
