Eggplant Sausage Bake

Ingredientes

  • 3 lg. eggplants, peeled and cubed
  • 1/2 pound bulk pork sausage
  • 1 c. minced celery
  • 1 c. minced onion
  • 3 green onions with tops, minced
  • 1 (6 1/2 ounce.) pkg. stuffing mix
  • 1/2 teaspoon pepper
  • 2 c. (8 ounce.) shredded cheddar cheese

Direcciones

  1. Cook eggplant, covered, in a small amount of water 10 min or possibly till tender. Drain and set aside. Saute/fry sausage, celery, and onion in a skillet till the sausage is cooked and vegetables are tender. Drain and set aside.
  2. Prepare stuffing mix according to package directions. Combine stuffing, eggplant, sausage mix, and pepper; mix well. Spoon into a greased 13x9x2 inch baking dish. Cover and bake at 350 degrees for 10-15 min. Uncover; top with cheese and bake an additional 5 min or possibly till cheese melts.
