%20I%20asked%20%22Eggplant,%20Yay%20or%20Nay?%22%20And%20most%20of%20you,%20I%20would%20say%20over%2075%25%20agreed%20with%20my%20family%20and%20said%20%22Yay%22!!%3C/p%3E%3Cp%3ENow%20yes,%20many%20of%20you%20said%20you%20love%20it%20fried,%20as%20an%20appetizer%20or%20a%20whole%20meal,%20and%20I%20can't%20argue%20with%20you.%20That's%20one%20of%20our%20favorite%20ways%20to%20eat%20it%20too.%20But%20I%20am%20on%20a%20mission%20to%20find%20even%20more%20ways%20for%20us%20to%20eat%20it.%20It's%20kind%20of%20something%20I%20don't%20think%20of%20a%20whole%20lot,%20and%20I%20need%20to%20change%20that.%20We%20love%20the%20flavor,%20and%20so%20I%20was%20really%20excited%20when%20I%20came%20across%20this%20in%20a%20magazine%20back%20before%20the%20holidays.%3C/p%3E%3Cp%3EDo%20you%20try%20to%20use%20more%20whole%20what%20pasta?%20If%20not,%20I%20would%20encourage%20you%20to%20try%20it.%20I'm%20not%20saying%20totally%20swap%20out%20all%20the%20%22regular%22%20pasta%20in%20your%20diet,%20but%20for%20certain%20dishes,%20the%20nutty%20flavor%20of%20the%20whole%20wheat%20variety%20really%20lends%20itself%20well%20to%20the%20flavor%20of%20the%20sauce.%20And%20this%20is%20the%20perfect%20example%20of%20that.%20The%20richness%20of%20the%20sauce,%20and%20eggplant%20are%20only%20highlighted%20by%20the%20whole%20wheat%20penne.%20In%20fact,%20I%20can%20honestly%20say%20I%20don't%20think%20it%20would%20taste%20as%20delicious%20with%20ordinary%20pasta.%20Eggplant%20is%20such%20an%20earthy%20veggie,%20and%20that%20matches%20so%20well%20with%20the%20earthiness%20of%20the%20pasta.%3C/p%3E%3Cp%3EOh,%20and%20did%20I%20mention%20this%20entire%20sauce%20is%20cooked%20in%20the%20slow%20cooker?%20Yep.%20The%20only%20thing%20you%20have%20to%20do%20is%20boil%20water%20when%20supper%20time%20rolls%20around.%20(Okay,%20technically,%20you're%20supposed%20to%20stir%20it%20a%20couple%20times%20during%20cooking,%20but%20if%20you%20don't,%20I%20will%20never%20know!)%3C/p%3E%3Cp%3EIf%20you%20are%20an%20eggplant%20fan,%20and%20looking%20for%20more%20ways%20to%20enjoy%20it,%20this%20is%20just%20the%20ticket.%20If%20you%20aren't%20quite%20sure%20about%20eggplant%20yet,%20why%20not%20give%20it%20another%20try,%20this%20time%20with%20something%20you%20know%20you%20like,%20pasta%20and%20tomato%20sauce??!!%20Either%20way,%20this%20is%20definitely%20a%20winner%20that%20will%20become%20an%20instant%20favorite.%3C/p%3E%3Cp%3ESpray%20Crock%20Pot%20with%20cooking%20spray.%20Combine%20butter,%20onion,%20celery,%20carrot,%20garlic,%20eggplant%20and%20mushrooms%20in%20slow%20cooker.%20Stir%20to%20combine.%20Add%20tomatoes.%20Stir%20well.%20Cover%20and%20cook%20on%20LOW%206%20hours,%20stirring%20a%20few%20times%20during%20cooking.%20Cook%20pasta%20according%20to%20package%20directions.%20Drain%20well.%20Top%20with%20eggplant%20sauce%20and%20garnish%20with%20extra%20parsley%20and%20cheese.%20%5C%3C/p%3E%3Cp%3EEggplant%20on%20Very%20Good%20Recipes%3C/p%3E){kind=link}
