Elderflower Fritters

Ingredientes

  • 8 x Elderflower heads
  • 110 gm Plain flour
  • 2 Tbsp. Sunflower oil
  • 150 ml Lager or possibly water
  • 1 x Egg white Oil for frying Icing sugar, sifted Lemon wedges

Direcciones

  1. Sift the flour and salt together and mix to a batter with the oil and lager. Allow to stand in a cold place for 1 hour. Beat the egg white till it holds in stiff peaks. Mix in the egg just before using the batter.
  2. Heat some oil in a deep pan or possibly deep fryer. Dip the flower heads in the batter and then drop into the smoking warm oil and fry till golden.
  3. Drain the fritters on kitchen paper. Pile on to a dish, sprinkle with the sifted icing sugar and serve with lemon wedges.
