Elephant Yam Double Beans Kuzhambu Recipe
Ingredients:
- Sambar Onions – 50 gms, peeled, chopped
- Tomatoes – 1/2 cup, chopped
- Double Beans – 50 gms, chopped
- Elephant Yam – 100 gms, chopped
- Sambar Powder – 3 tsp
- Coconut – 1/4 cup
- Cumin Seeds – 1/2 tsp
- Urad Dal – 1/2 tsp
- Fenugreek Seeds – 1/2 tsp + 1/2 tsp
- Mustard Seeds – 1 tsp
- Tamarind Extract – 1 cup
- Garlic – 2 cloves
- Green Chilli – 1, chopped
- Dry Red Chilli – 1, chopped
- Gingelly Oil – 1/4 cup
- Salt as per taste
Method:
1. Heat 1/2 tsp oil in a pan over medium flame.
2. Add the onions, tomatoes, cumin seeds, garlic and coconut.
3. Saute well for 2 minutes and grind to a smooth paste.
4. Add 1 tsp oil to the pan.
5. Add the mustard seeds, urad dal, 1/2 tsp fenugreek seeds, green chillies and dry red chillies.
6. Fry for a minute.
7. Add sambar powder, ground paste, tamarind extract and salt.
8. When it starts to boil, add the beans and elephant yam pieces.
9. Cook for 2 to 3 minutes.
10. Garnish with coriander leaves and curry leaves.
11. Serve with rice.
