Emerald Chicken With Grapes And Kiwi

Ingredientes

  • 2 tsp soy sauce (or possibly light soy sauce)
  • 2 tsp chopped ginger
  • 1 tsp Chinese rice wine (or possibly dry sherry)
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 1/8 tsp freshly-grnd white pepper
  • 2 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1 Tbsp. soy sauce
  • 2 tsp cornstarch
  • 1 tsp Hoisin sauce
  • 1/4 tsp salt
  • 3/4 lb boneless skinless chicken cut 3/4" cubes (breast or possibly thighs)
  • 1 Tbsp. vegetable oil
  • 1/2 x red bell pepper cut 1" diamonds
  • 3 x green onions trimmed, and cut into 2" lengths
  • 1/2 c. green and red seedless grapes cut in half
  • 1 x kiwi fruit peeled, and cut into 1/2" cubes

Direcciones

  1. Stir the soy sauce, ginger, wine, cornstarch, salt and pepper together in a bowl till combined. Add in the chicken and stir to coat. Let stand for 10 min.
  2. For the Sauce: Stir the honey, lemon juice, soy sauce, cornstarch, hoisin sauce and salt together in a separate bowl till the cornstarch is dissolved.
  3. For the Dish: Heat a wok over high heat till warm. Pour in the oil and swirl to coat the sides. Add in the chicken and stir-fry till no longer pink, 2 1/2 to 3 min. Add in the bell pepper and green onions; stir-fry till onion are tender, about 1 1/2 min.
  4. Pour the sauce into the wok and cook, stirring, till the sauce boils and thickens. Add in the grapes, and kiwi fruit. Cook for 30 seconds to heat through, then scoop the contents of the wok onto a serving platter. Serve immediately.
  5. This recipe yields 4 servings.
